Whats Happening in the Office-Plant Based Nutrition of Course

Plant Based Nutrition Course Starts Today

Today was the start of our forth session in plant based nutrition. We have a full house of participants. Most are just starting their plant based journey. One patient has already lost over 15 pounds in two weeks after beginning his transition after an angioplasty. We started class with a tasting of cajun bean soup with seitan sausage accompanied by oil and dairy free cornbread. Hemp milk replaced dairy milk and applesause replaced the oil. Vinegar, baking soda and baking powder were used to produce the fluffy tecture. We had the pleasure of a guest observer, Karla Dumas RD of the Humane Society. She graciously brought the group meatfree Monday totes. I spoke on the science of vascular disease and how a plant based diet allows the body to heal through oxidative stress reduction and the production of nitic oxide to dilated blood vessels. We discussed Joel Furhman’s famous G-bombs which is the acronym for Greens, Beans, Onions, Mushrooms, Berries and Seeds. We focused on all of the wonderful vegetables and fruits available on a plant based diet as well as the meaning of “whole” grains. The idea is to transtion to eating foods as close to the way they grow as possible. We finished with a menu for the week that could be made in under an hour start to table. There are 6 total sessions in this course with each lasting an hour and occuring every other Wednesday. The next session will include more recipe and menu sharing along with more science behind the nutrition. I will probably be cooking in class to demonstrate just how easy and tasty plant based nutrtion is.

Below is one of the menu items. Potato spinach soup with stewed tomatoes and a zuchinni and tomato sandwich.

There is nothing more rewarding that to see people take back their health and heal themselves through plant based nutrition. I cant wait to see the successes that this class will achieve.

Take care and be palnt strong.
